Ingredients
¼ cup kodo millet
4 cups milk
2 tbsps ghee
1½ tbsps charoli
1 tbsp finely chopped pistachios
1 tbsp finely chopped almonds
1 tbsp finely chopped cashew nuts
¼ cup sugar
A large pinch of nutmeg powder
¼ tsp green cardamom powder
Blanched, peeled, and slivered pistachios for garnish
Saffron strands for garnish
Method
Boil milk in a pan for three to four minutes. One tablespoon of ghee should be heated in a shallow skillet before adding the charoli, pistachios, almonds, and cashew nuts. Sauté for one to two minutes before transferring to a plate. Then, add the kodo millet and cook for an additional two to three minutes in the remaining ghee. After that, pour it into the milk that is now heating and stir everything together. It should be cooked for 10 to twelve minutes, sometimes stirring. Add sugar next, and thoroughly combine. Then blend everything before adding the nutmeg powder, green cardamom powder, and toasted nuts. After that, pour the kheer into a serving bowl and stir in the dried fruits.
