Christmas cake recipes: It’s that time of the year again. Christmas is around, celebratory mood is at crescendo and there are so many delicious treats to relish and enjoy. But nothing beats the pleasure of having a Christmas cake. In fact Christmas isn’t complete without a cake. Families have their own tradition of Christmas cakes with recipes passed down over the generations.

Here we bring to you yummy cake recipes that you can dish out in a jiffy at home. So follow the recipes, put on the apron and get, set, go:

Red Velvet Cake

Red Velvet is a perfect cake recipe for Christmas. This magnificent cake has rich cream cheese frosting over a soft spongy base that will make everyone happy.

Recipe

1 1/4 cup all purpose flour

1/2 teaspoon salt

1 cup sugar

1 cup Refined oil

1/2 teaspoon edible food color

1/2 teaspoon baking soda

1 teaspoon unsweetened cocoa powder

1 egg

1/2 cup buttermilk

1 teaspoon vanilla extract

For Icing

1/2 cup cream cheese

1 tablespoon finely chopped almonds

1/4 cup butter

1 cup icing sugar

1 tablespoon finely chopped cashews

Method:

1- Take a bowl, add flour, baking soda, cocoa powder and salt together. Keep the mixture aside.

2- Mix the sugar and eggs in a different bowl and gently pour some oil and beat well. Whisk the batter properly and ensure that there are no lumps in the mixture. Stir till it attains a balanced consistency.

3- Add the flour mixture and buttermilk. Mix well and add 1/2 tsp vanilla extract and food colour (red).

4- Divide the mixture among 3 round greased cake pans. Bake in a preheated oven at 350 degrees F for 30 to 40 minutes. Insert a toothpick or skewer in the centre and if it comes out clean, the cake is done. Remove and cool. To make the icing, combine the cream cheese and butter.

5- Add the icing sugar and beat well till smooth. Add 1/2 tsp vanilla extract and almonds. Spread the frosting between the layers, on the sides and on top of the cake.

Your cake is ready to be served.

Plum Cake

Christmas Plum Cakes are a traditional dessert treat that are made during the height of the Christmas season.

INGREDIENTS

Oven temp: 150 C-300

1 cup butter

1 1/2 cup sugar

6 Eggs

125 gms almonds, chopped

2 tsp vanilla essence

2 1/2 cups mixed fruits (sultanas, raisins, candied peels and cherries), chopped

2 cups refined flour

An 8 inch round cake tin, lined with a double layer of grease-proof or brown paper at the bottom and on the sides.

Mehtod

1. Mix the chopped fruit and almonds with 2 Tbsp of the maida and keep aside.

2. Cream butter, sugar, eggs and vanilla together.

3. Fold in the flour and then the fruit mixture.

4. Transfer mixture into the prepared tin and bake in a pre-heated oven for 30-40 minutes.

Serve once cools down.

Vanilla Cake

A delectable cake for any occasion, Vanilla Cake can be prepared in a jiffy with the basic ingredients from your pantry.

Recipe

1- Take a small bowl of regular salted butter and beat it for 5 minutes till its colour starts to change, from yellow to white.

2- Add powdered sugar and beat thoroughly till sugar is mixed in.

3- Add 3 eggs, one at a time and beat every time you add one.

4- Beat till you get a creamy mixture. Add vanilla essence and beat again for 30 seconds.

5- Now take all-purpose flour, add baking powder and sift both through a colander and put it in a bowl.

6- Add the flour gradually into egg and butter batter while folding regularly. Add milk at room temperature.

7- Now grease baking tray/pan. Line with butter paper and grease it from top. Dust some flour on the sides of the pan. Once the sides are completely coated, turn it upside down and tap on it to remove excessive flour.

8- Add cake batter and spread evenly. With a tooth pick run through the batter to leave some air for the batter.

9- Bake the cake in pre-heated oven for 40-45 minutes.

Serve once it cools down.
