Eid 2023: With the joyous festival of Eid just around the corner, preparations are in full swing to celebrate this special occasion with loved ones. Alongside the traditional prayers and festivities, Eid is also renowned for its delectable food. From aromatic biryanis to succulent kebabs, the Eid feast promises a gastronomic adventure like no other. To enhance your culinary experience, we bring you an easy-to-follow recipe for mouth-watering Mutton Kebabs that will leave your taste buds craving for more.

Ingredients:
- 250 gm mutton mince (keema), boiled
- 2 tbsp oil
- 1/2 tsp cumin seeds
- 2 tbsp pathar phool (earthy aroma)
- 4 onions, finely chopped
- 2 green chillies, chopped
- 1 tbsp chopped ginger
- 1 tbsp chopped garlic
- 2 tbsp meat masala
- 1 tsp red chilli powder
- Salt to taste
- 1 egg
- 1 tsp lemon juice
- 2 tbsp gram flour, dry roast on a tawa till fragrant
- 1 tbsp butter, at room temperature
- 1/2 tsp cardamom powder
- Oil to fry kebabs
Method:
- Heat oil in a kadhai (deep frying pan). Add cumin seeds and pathar phool, and sauté for a while to release their flavors.
- Finely chop onions and green chillies then add them both to the frying pan on medium heat until they are golden brown.
- After that add chopped ginger and garlic and saute them for a minute or less on low flame.
- Now mix meat masala, red chilli powder and salt into the frying pan.
- Add the boiled mutton mince to the pan and roast it for 3-4 minutes until the mixture becomes dry. Allow it to cool completely.
- Transfer half of the mixture to a mixer and add an egg and lemon juice and make it into a smooth paste.
- Make a thin paste by transferring the remaining half of the mixer to the grinder again, after that transfer the mixture into a small bowl.
- Add gram flour (besan) and butter to the mixture to achieve a soft consistency. Refrigerate the mixture for 30 minutes to allow it to firm up.
- Mix cardamom powder into the mixture and shape it into kebabs.
- Transfer oil in the frying pan and after the oil is heated, pan-fry kebabs until they turn golden brown on both the sides.
- If there is excess oil, make sure to drain it on a paper towel
- Serve the tantalizing Mutton Kebabs hot and enjoy their divine flavors.
