Masala Khichdi recipe: is one of the most healthy food in Indian homes, our favourite comfort food. A bowl of hot khichdi served with a big dollop of ghee, your favourite ‘aam ka achar’, papad and dahi is a foodie’s delight. It is healthy, light on the stomach and so yummy!
Pongal and Makarsankranti is not complete without well made masala khichdi. So this Sankranti, make this delicious dish and serve with the right accompaniments.

Here’s the recipe for masala khichdi:
Ingredients
1/2 cup rice
1/4 cup toor daal
2 tablespoon ghee
1 dash cinnamon
1/3 cup peas
1/2 cup potato
1 teaspoon ginger
1/4 cup moong dal
1 teaspoon cumin seeds
1/4 teaspoon asafoetida
1/2 teaspoon sugar
1/2 cup cauliflower
1 bay leaf
5 sprigs coriander leaves
Directions
Wipe the lentils clean with a clean cloth and then dry roast them. Wash the rice in running water 5-6 times and soak it for half an hour.
Fry potato and cauliflower in ghee
Now, put the pressure cooker on medium flame and heat ghee in it. When hot enough, add cumin seeds, bay leaf, asafoetida, cinnamon in ghee and fry them for a few seconds. Next, add turmeric, ginger paste and sauté for 2-3 minutes. Finally, add the potato, peas and cauliflower along with salt and sugar. Stir well and cook on medium to high flame for 2-3 minutes. Once the vegetables are cooked, add soaked rice along with dal. Mix well all the ingredients and cook for 4-5 minutes
Now, add 3-4 cups of water to the rice and close with its lid. Pressure cook for 3 whistles and turn off the flame. Let the steam release on its own and serve hot with a little ghee, papad, achaar, and raita.
Note: You can add little pearl millet to it to increase the taste. Also, add more veggies of your choice. Short-grain rice goes best.
